The European grape variety Pais has been a part of the Chilean wine industry for hundreds of years. It lost favor in the twentieth century as the noble French grape varieties of Cabernet Sauvignon, Merlot and Pinot Noir rose to prominence and found success in international markets.
Pais can be unruly in the vineyard, so it takes a family with the patience and expertise of the Gillmores to farm it properly and allow it to produce a wine that impresses us year after year. The Mariposa Pais drinks like a French Beaujolais with its medium body, bright fruit and soft tannins. It is immensely satisfying, and at $16 per bottle, it’s a wine you can enjoy again and again.
